The offical size playing area is 120 cm x 120 cm, which works out to about 4 feet square.

On these, my primay concern is how the forces balance.
Even though it is a demo and 'doesn't really matter,' you want to give them a true impression of the game.
If one demo force is very shooty (Mostly Forsaken based) but the other is not (most Dragryi or Brood) shortening the board can alter the blance of the game. In these cases you want to make sure the two forces deploy atleast a scoshe further than the longest Ranged Assault weapon shoots.
If both armies are roughly equal in range (or lack thereof) then size isn't as important, and smaller is often easier to move, and looks better with just a couple models on it.

2'ound is good for general demos, 2'x2' square leads to slightly more interesting if somewhat longer games. Rumbles are run on 2' square boards. The point of a demo is to show the game quickly, and three tunrs of manuevering loses the person's interest. It should be small enough for bloodshed in the first turn.

I'd go with something like a 61x61 (like people have been recommending). Because with demo games the key is for people to touch the models, and roll dice, and it's hard to do that when they're half a meter apart. In fact, I've found that some interesting demo games start on turn 3 (just set up the demo like you think it would be after 3 turns). That way they're in the action right away.

ONE THING TO remember.. fast.. get into action quickly, furious.. (action should occur on turn one.. even if it is only shooting..) lots of dead and lots of dice rolls, and friendly.. sometimes, it's ok to let the other guy win..
