Okay so I am a complete newb at the game and played my first demo at Adepticon last weekend. A friend told me about the game and after playing the demo and looking at the models I decided that Saint Mary and her Flense looked pretty hawt. I have no idea about the game and making a force any suggestions of where I should go from here and why?

I love Saint Mary. One thing to remember is she is the only model in the game with a RoF 2 template weapon... Once you play a bit more you'll see how devastating templates can be.
For a starter 500 force I run something like this:
Saint Mary (130)
Flense x2 (130)
Clergy Ann x2 (120)
Bane x3 (120)
500/500
Mary Takes Charge of the Clergy Ann and they provide a solid fire support for the Banes, who are the centerpoint of my advancing forces, while the Flenses usually move up a flank or where-ever enemy firepower is low.

Excellent advise. What would say is the worst matchup for Saint Mary? Shooty, Heavy Armour, Close Assaults?

A Saint Mary force tends to be a bit more of a generalist army than the other saints and is therefore not particularly strong or weak against any other force. Although many Saint Mary based forces tend to have an advantage vs. Skaard with the various Hatreds their units have.

Its always a good bet to take banes in ANY forsaken force, but in particular with mary i think its a great combination. They usually run in front of my Clergy Anns' as they have higher armor to screen the softer troops. Clean up duty goes to Clergy Ann or Mary herself which isn't much once the enemy breaks against the shield wall that is a bane.
Judah/Contradiction are pretty interesting options wise, the shotgun gives something to clear out hordes with and the saber isn't a bad weapon. The +20pv to upgrade a Contradiction to Judah is well worth it, because sidestep is better than any armor save.
